Smoky Kale Tacos

Chris and I have been trying to add more greens to our diet. I love making kale, but I really only usually do one thing with it. So, a couple weeks ago, I decided to try using kale as taco filling. And it worked splendidly! In fact, she has requested it several times since then. And I made it for dinner tonight! Try it out, let me know what you think, and don't hesitate to share with me some of your ways of making or preparing kale!

INGREDIENTS
1 head kale
6 cloves garlic, halved (or more)
2-3 shallots, sliced
1 tablespoon olive oil
1 tablespoon lime juice
1/2 teaspoon chili powder
1/2 teaspoon Mexican oregano
A few dashes of liquid smoke
A pinch of powdered cayenne
Freshly ground salt and pepper

DIRECTIONS
Wash each leaf of kale very well. Shake or pat as much water from them as possible when you are done. Then cut the kale into small pieces. Don't just shred it. If you don't make sure the pieces are fine, your tacos will be very hard to eat. Stringy! Less than fun.

Warm the oil on medium heat and then add the onions and garlic. Sauté for a few minutes and then add the remaining ingredients. Cook until kale has become soft. Then spoon into taco shells and enjoy.

Optional toppings and other fillings include seasoned seitan or tempeh, black beans, Spanish rice, and vegan cheese. We prefer our tacos in soft corn tortillas warmed in the microwave while covered by damp paper towels. You may also use soft flour tortillas if you'd like. Or you can just fill those puppies up with your kale. It's delicious on its own!

Makes 2-4 servings, depending on additional taco fillings or sides.

UPDATE: To make this dish oil-free, combine the chopped kale, minced garlic, shallots, oregano, cayenne pepper, salt, black pepper, and 1/4 cup oil-free, sugar-free vegetable broth in your pot. Cook over medium-low heat for five minutes, then stir. Continue to lightly saute the kale until softened, then add the chili powder, liquid smoke, and lime juice.
