Vegan Food Truck Fridays: Unity Vegan Kitchen

Happy Monday, y'all! I'd like to begin this post with an apology. I completely forgot to hit "publish" on this entry Friday night. And then I spaced it over the last two days. It also seems unlikely that Chris and I will be able to visit another food truck for the final installment of Vegan Food Truck Friday, so I'm going to go ahead and consider this the last edition.

Honestly, I feel like I've been on a bit of a sabbatical from being a dedicated food blogger lately. Which is crazy, of course, considering the fact that I've published more posts in the past couple of months than I have in probably the whole year. Maybe it has more to do with the fact that I haven't been experimenting with recipes lately. In other words, I haven't been cooking very much.

And I haven't been going out to eat anywhere new, either. I've been spending a lot of money on things that Chris and I need and therefore sacrificing things like trying out new food trucks... Highly unfortunate considering my current project, Vegan Food Truck Fridays!

So I'm bringing you another feature without a review or photos from a highly anticipated vegan food truck that just began serving customers last week. Unity Vegan Kitchen premiered at the Texas VegFest in April. Vegan lasagna was among the items they served there, consequently creating a swarm of vegans around their table consistently throughout the event.

Today, they are serving up entrees from their park in East Side Food Park location at 2209 E Cesar Chavez, everyday but Tuesday from 5-8. Other menu items include muffaletta sandwiches, tostadas, and vegan crab cakes.
